Sweet Potato Paleo Brownies

Yes it's another recipe- guys I am getting good with this cooking stuff! First let me clarify something as I've had this reaction from most people when I tell them that I've made brownies using sweet potato - it's not gross and no you can't taste it ok! It tastes like brownie - for real!

If you want to jump on this bandwagon then continue reading because I am loving these brownies right now...

Ingredients and tools that you will need to get this party started:

1 1/2 cups of sweet potato (no skin)
1 cup of pure nut butter (I used peanut)
3 tablespoons of cocoa powder (paleo - 100% organic and pure powder)
1/4 cup of pure maple syrup
1 teaspoon of vanilla extract (to be paleo friendly vanilla extract needs at least 35% alcohol & 100g of vanilla beans per litre)
2 teaspoons of cinnamon
1 teaspoon of baking powder (use baking soda for paleo)
1 egg

Mixing bowl
Measuring cups
Pan or tin
Greaseproof paper
Whisk

Pre-heat your oven to 200oC (mine is fan assisted so adjust if needed)



Helpful tip: I cooked my sweet potatoes in the microwave. You need the flesh to be soft and room temperature to mix. If it's too hot it starts to bind the ingredients too quickly! Mash up the potato otherwise you end up with orange chunks in your brownies. It tastes fine but if you like your brownies to look perfect then get that potato mashed.

Ok so here's the easy part - as you are measuring out all your ingredients pop it straight into a mixing bowl - just remember to save the egg for last! 

Add that in once all the other ingredients are in the bowl and you're good to go!

Ok so your brownie should be looking smooth and all nicely whisked. A proper baker would tell you a specific tin or pan to put it in but truth be told I just used the only dish I had left - a glass oval pyrex! I lined it with greaseproof paper and put the goodness in and evened it out as best as I could.

Pop that chocolatey goo into the oven and set a timer for 20minutes.

When it's time, get your brownie mixture out and set it on the side. Grab a knife and poke that brownie in the middle. If the knife has mixture on it when you pull it back out then it's not done. Pop it back in for another 5-10 minutes. Once you get a 'clean' knife your brownie is baked. Get it onto a cooling rack and let the brownies chill out on the side for a bit.

Once cool slice up your brownies to your desired portion size. I was good and cut it smaller then what I would class my usual brownie size. I got about 12 out of this mixture!

Keep your brownie refrigerated and take a piece (or two) and pour a nice cuppa tea and you're good to go! They should easily last a week refrigerated but I had already eaten it before that point!
